Sage and Mozzarella Chicken over Creamy Polenta

Fast Lane Harvest Festival: Chicken breasts baked with sage and garlic topped with fresh mozzarella cheese over creamy polenta.

Medium Instructions

Thaw in refrigerator
1.Preheat oven to 375°F. 2.Place chicken breasts on a sprayed foil-lined baking sheet. Dot each chicken breast using half compound butter mixture (NOTE compound butter contains cayenne pepper, for minimal heat, add ¼ amount on chicken and in polenta). Reserve the remaining half of butter for polenta. 3.Bake chicken breasts for 12 min. Remove from oven and top each breast with 1 slice of fresh mozzarella cheese. Bake for another 5 min. or until cheese is melted and chicken is cooked through (internal temp 165°F.) 4.Meanwhile, in a large sauce pot, bring 2 1/4 cups of hot water to a boil. When water is boiling, gradually sprinkle in dry polenta mixture, stirring constantly. Lower heat to a simmer and stir polenta until thickened (3-4 min.). Add bag of half & half and cheese to polenta and stir until cheese is melted. Right before serving, remove polenta from heat and add remaining compound butter, stirring to combine and season with salt and pepper to taste. 5.To serve, spoon polenta into shallow bowl. Top with Sage and Mozzarella Chicken and enjoy!
*if spice is a concern, compound butter can be added on the side when dish is complete*

Prep time: 20-25 min.
