Gnocchi Vegetable Primavera

New A great Meatless Monday option! Golden pilllowy gnocchi sauteed with a vegetable mix of zucchini, carrots and peas in a light lemon cream sauce.

Medium Instructions

Thaw in refrigerator
1.Heat medium sauté pan over med-heat. Drain vegetable blend and add to heated pan with 1 Tbsp of olive oil. Cook vegetables until heated through and begin to brown, about 5 minutes.
2.Add gnocchi and additional 1 Tbsp. olive oil (if necessary) to pan, allow gnocchi and vegetables to brown.
3.Lower heat and add primavera sauce. Toss to coat everything evenly and allow parmesan in sauce to melt and incorporate, approximately 5-8 minutes of simmering.
4. Serve and enjoy!
